Try our Italian rice salad, it’s versatile, delicious, and nutritious.

Ingredients:

  • ½ Lemon (zest, and juice)

  • 4 clove Garlic (peeled and minced)

  • 1 tbsp Italian Seasoning

  • 5 tbsp Olive Oil

  • 600 g Sunwhite Medium Grain Rice (leftover)

  • 60 g Black Olives (sliced)

  • 1 Red Onion (peeled and diced)

  • ½ Cucumber (seeded, cut into cubes)

  • 4 tbsp Pine Nuts

  • 100 g Cherry Tomatoes (quartered)

Method

  • In a small jar, mix the zest and juice of half a lemon, garlic cloves, Italian seasoning, and olive oil.

  • Loosen the rice out with a spoon or wet hands so that the rice grains are separated.

  • In a large bowl, mix leftover rice and the rest of the salad ingredients. Drizzle the dressing and mix thoroughly.

  • Serve with chopped fresh herbs like basil or parsley if desired.
