Method

  • Wash the rice, strain it and mix it in a pot with two cups of water and a teaspoon of salt. Bring it to a boil. Lower the heat, cover the pot and cook for 10 minutes.

  • Stir in the carrots and peas, cover the pot again and cook for 10 more minutes. Remove from heat, let it stand, covered, for a couple of minutes then fluff the rice using a fork.

  • Heat a tablespoon of the oil in a saucepan, add the eggs and cook for 2-3 minutes. Turn the resulting omelette over and cook it for 1-2 minutes.

  • In a different pan, heat the remaining oil and cook the spring onions for 2-3 minutes until tender and translucent.

  • Add the garlic and cook for 2-3 more minutes.

  • Add the peppers, broccoli, and soy sauce. Season with five-spice mix, salt, and pepper and cook for 2-3 minutes.

  • Put the omelette in the middle of the broccoli and pepper mix and scatter the cooked rice around it. Cook the mix for 2-3 minutes stirring it gently.

  • Season with salt and pepper. Serve.
