Vanilla Rice & Fruit Trifle
Method
Combine milk, sugar and vanilla in a medium saucepan. Bring to a boil, stirring occasionally.
Gradually stir in the rice. Cover pan and cook over low heat, stirring occasionally, for 45 minutes or until most of the liquid is absorbed.
Remove from heat, stir in the cream and allow to cool. Slice the sponge rolls and place them in the bases of tall serving glasses.
Top with alternating layers of creamy rice and sliced fruit. Serve chilled.
