Stuffed Cabbage Rolls
Method
In a pot, stir in the rice, two cups of water and a teaspoon of salt. Bring to a boil.
Lower the heat, cover the pot and cook for 20 minutes until the rice is tender and has absorbed all the water. Remove from heat and set aside.
In another pot, add 3-4 cups of water with a teaspoon of salt and bring to a boil. Remove the leaves off the cabbage head gently and cook them in the boiling water for 10 minutes. Drain the pot and wash the leaves with cold water.
In a saucepan, heat 3 tablespoons of olive oil and cook the onion and garlic seasoning with salt and pepper for 4-5 minutes until tender.
Add the tomato paste, paprika, sugar and vinegar. Keep cooking for 8-10 minutes stirring occasionally.
Add the beef and cook for 3-4 more minutes until golden brown in color. Add the rice along with the stock and thyme and cook for 3-4 minutes.
Put one tablespoon of the rice mix into each cabbage leaf and roll all sides firmly.
Place the stuffed cabbage rolls in a baking dish filled with the remaining sauce.
